Weekday classic

So this week I had my last working day for a few weeks so I’m cooking up a storm in the household! During the week I also always try to keep it a bit healthy so Wednesday turned out to be a classic Nicoise. I adjusted the dressing a little bit and opted for a pre-made bag of French herbs and mixed it up with 0% fat Greek yoghurt.

Ingredients:

  • New potatoes
  • One can of tuna (you can also go for fresh tuna but the supermarket only had albacore tuna and personally I don’t like the white tuna)
  • String beans
  • Anchovis
  • Egg
  • Tomatoes
  • A mild mixed salad (stay away from for instance arugula because it can have a bit too much of a peppery kick)
  • Olives (but I forgot to put mine on!)
  • Yoghurtdressing

Plate it all up on a plate an enjoy!
